The Producer
We have been looking forward to this Indonesian gem produced by the Koerintji Barokah Bersama Cooperative, which Triyono, a young entrepreneur, is managing. The cooperative is situated in Mount Kerinci, the highest stratovolcano on the island of Sumatra. Its historic eruptions have resulted in volcanic soil rich in nutrients and perfectly fertile for growing crops, resulting in a complex & very fruity cup.
The Lot
This lot is a natural anaerobic. After picking and floating, the cherry is sealed and stored for 7 days in airtight bags in a cool & dry room. Afterward, it's dried on raised beds for 20 to 23 days. The long anaerobic fermentation time results in a very sweet espresso with distinct tropical fruit notes.
