The roaster's story:

The Producer

This AB lot was produced by the Kii Factory (wet mill) of the Rungeto Cooperative. The mill is fair-trade certified and receives cherry from neighboring farmers on the slopes of Mount Kenya in the Kirinyaga region. This lot's cup profile is classic Kenya. Great clarity, a complex cup profile, and plenty of florals. The mix of soil, climate, and generations-long experience results in unrivaled quality. 

Processing

After the cherries are being hand sorted, they are next sent for depulping and dry fermentation for 18-36h. Next the cherry is washed, graded by density and soaked in clean water overnight. Depending on the weather the cherry is then sun-dried on African beds in between 12-20 days.
